The grapes come from three different sites and climates, one closer to the ocean giving a mineral and saline edge and primarily made with the regions Gin Gin clone. Half the juice is run off into French oak barriques where wild yeast fermentation is encouraged and the other half in steel which is carefully inoculated. Batonnage occures weekly following this for mouthfeel. The palate exhibits a beautiful integration of fruit with oak nestled gently, round and textured in the structure. The wine gives elegant notes of orange blossom, lemon pith and grapefruit aswell as a saline and mineral finish.
